I was craving cookies and pancakes real bad the other day so I told myself I’m gonna have both.
It tastes like a soft oatmeal cookie 😍
My exams finally ended like finally. The past few weeks had been so tortuous. And I was “craving” to bake and cook more than ever. I wrote down all my ideas and experimented some. And this cookie pancake is one of them 😉 The first time I tried, it was super crumbly. The second experiment scored 100% on the taste but 50% for the looks.

VEGAN OATMEAL COOKIE PANCAKES
6 tbsp oat flour (blend rolled oats into flour)
2 tbsp rolled oats
1 heaped tsp light muscovado or coconut sugar
1 tsp baking powder
Pinch of salt
1/2 large banana
1/3c to 1/2c non dairy milk
1T coconut oil
Combine your dry ingredients in a mixing bowl and mix well.
Mash your banana on a flat surface very well.
Add the rest of your ingredients into the mixing bowl and mix until just combined.
You can fold in chocolate chips at this point.
Heat your pan and grease with oil of choice. I recommend coconut oil.
Once your pan is hot, turn the heat to low.
Drop 1 big spoonful of the batter onto your pan and spread it out a little.
Let it cook until the top looks dry and bubbles are seen. It is important to not flip too early because it will create a mess on the pan. Mine got stuck 😅 Please read this beforehand.
Continue flipping your pancakes and then … eat them nom nom nom 😋
