Single Serving Healthy Chocolate Muffin

How do you like your muffins? I like them fluffy and tender but fudgy and moist ones tastes so much more decadent and they’re gone way way waaaaaay faster.


Don’t you agree?


Give me a single chocolate muffin anytime.


Fudgy. Moist. Chocolatey. Even more decadent with chocolate added in the middle of the batter before baking.

2 1/2 tbsp whole wheat flour
2 tbsp light muscovado
1 tbsp cacao/cocoa powder
1/8 tsp baking soda
1/2 tsp espresso powder and/or pinch of salt
3 tbsp milk of choice
1 tbsp yogurt (or sub with mashed banana/applesauce)
1 to 2 tbsp chocolate chips, NOT optional πŸ˜›
Whisk the dry ingredients together very well.
Add milk and yogurt, mix until well combined. Don’t over mix.
Fold in chocolate chips, or reserve them to add in the middle of the batter.
Preheat your oven to 180Β°C and grease a ramekin. For even easier removal, lightly coat your ramekin with some whole wheat flour.
Bake for 15 minutes or until a toothpick in the middle comes out clean. Enjoy!
