Hello! How are you guys doing? School has been stressful these past few weeks but it’s all gonna be over next Tuesday!! Because my Advanced Financial Accounting exam is next Tuesday. And then I’m gonna rest for a couple of days before working. I’ve got a part time job at a vegan ice cream and pizza place. I’m so happy to be able to work in a place that serves healthy and wholesome food! I’m pretty excited! My manager told me only vegan food is allowed in the shop premises. I’m not vegan, but I do not have any problems cooking or baking vegan so I’m really really excited!! (I just said I’m excited like twice HAHAH so you can tell how excited I am right 😌)
Let’s talk pancakes. They are so delicious and so incredible. But honestly, they take up a lot of time. Why not we bake them?
BREAKFAST SERVED IN 15 MINUTES
The perfect one-bowl recipe to start your lazy mornings. The best ever soft and fluffy deceptively sinful pancakes with a healthy twist that you can’t even tell.

Preheat your oven to 180°C.
Follow steps 1 and 2.
Grease and line with a strip of baking sheet across a 16cm wide cake pan or 2 to 4 ramekins, depending on the diameter.
Pour in your pancake batter and arrange blueberries/sliced bananas on top, I only used blueberries here because I ran out of bananas.
Put into the oven for 10 to 15 minutes, a toothpick inserted into the middle should come out clean.
Gently run a knife on the sides and lift the baking sheet to get the pancake out.
There you have it! A beautiful round pancake.
Go crazy with toppings like I did: chocolate chips, strawberries, blueberries, granola, coconut flakes, pure maple syrup.
