Now that you’ve made the lemon curd, let me introduce you to my latest creation.
Lemon pie in baked oats form. It’s so good I am not kidding. You gotta make this!!!!
LEMON PIE BAKED OATS
6 tbsp rolled oats
6 tbsp vanilla soy milk or milk of choice
1/4 tsp baking powder
1 ripe/overripe medium banana, mashed
1 tbsp pure maple syrup or other sweetener of choice
Zest of a lemon
2 tbsp lemon curd
The night before, soak oats in milk. Cover and refrigerate until ready to use. You can keep this for up to 2 days. Alternatively, you can soak for 15 to 20 minutes for immediate baking.
When ready to bake, mix in your baking powder first.
On a flat surface, mash your banana and add to your oats, along with sweetener and lemon zest. Mix well.
Pour half into a greased ramekin, add your lemon curd in the middle and then pour in the rest of your oats mixture.
I placed 2 thin slices of lemon on top and sprinkled demerara sugar all over.
Bake at 200°C for 22 to 30 minutes.
Serve with more lemon curd on top because why not?
