Spiced Mushroom Rice (with Quaker Oats for Rice)

The other day I was introduced to Quaker Oats for Rice and oh my gosh. I love it so much. This recipe is dead easy. Like seriously. Cooking doesn’t get easier than this!

It seems that many people aren’t fans of oats. Out of all my friends, only a few of them eat oats and only one or two actually like them.

Oats have amazing health benefits (just Google it, I’m not gonna provide you with a long list because it’s too long :-P) and it’s a good addition to your diet, if you have not already.

I have many a blog full of stovetop and baked oatmeal recipes which you can check out in the recipe tab above but not one that is savoury…

Not only is this more nutritious and delicious than your regular rice bowl, you can hardly taste the oats at all. Tested and proven by my guinea pigs friends and family!

But why mushrooms you may ask. Because I love them! You can totally leave them out or substitute for something YOU love. Make it your style!

SPICED MUSHROOM RICE (WITH QUAKER OATS FOR RICE)

1/2 cup quaker oats for rice
1 1/2 cups white or brown rice
1 chicken stock cube
2 1/2 cups to 3 cups water
1 tsp garlic powder (or 2 cloves of garlic, finely chopped)
Salt & pepper to taste
1 tsp coriander seeds
2 cloves
2 star anise
1 to 2 tbsp thyme
8 sliced shiitake mushrooms or whole dried mushrooms
This recipe is so simple… Basically, just dump everything in the rice cooker and cook it.
I placed the coriander seeds, cloves and star anise in a tea filter bag so I don’t have to fish them out later on.
You can also use 1/2 water and 1/2 chicken or vegetable stock, omit the stock cube if you are.
