Brownie Baked Oats

Initially I named this double chocolate maca baked oats which is literally what it is but I changed my mind when I took the first bite…

This tastes like a super moist, gooey and fudgy chocolate brownie! You HAVE to try this. You NEED this in your life.

I’m not kidding bc my mom actually asked for seconds. And she also agrees that it tasted like a chocolate brownie. Yay I’m not hallucinating!

This is literally super food baked oats. You have the goodness from raw cacao, raw maca and dark chocolate. What else can you ask for? I mean, there’s chocolate! In two forms! And it tastes like a brownie!

BROWNIE BAKED OATS
6 tbsp quick cooking rolled oats, NOT instant oats (you can pulse your whole rolled oats a few times in your food processor too)
Pinch of salt
7 tbsp milk of choice
1 heaped tsp light muscovado, or any other unrefined sugar such as coconut sugar
1/3 tsp baking powder
1 tbsp raw cacao powder
1 tsp raw maca powder
3 to 4 at least 70% dark chocolate squares, roughly chopped
Handful raisins, optional
1 medium banana, mashed
I like to prepare this (actually, I LOVE overnight prep for everything!) the night before where I mix the oats with salt (sometimes I don’t use salt) and soak in my favorite soy milk in one bowl, and mix all the dry ingredients in another small bowl. Cover both of them in keep in the refrigerator!
The next morning, you’ll just have to mash your banana and add to your oats, along with the dry ingredients and just mix mix mix!
Pour into a greased baking dish and bake at 180°C for 24 minutes, then turn up the heat to 220°C for 1 minute. Serve immediately!

I just came across your blog and everything looks so good! I can’t wait to try all these delicious looking recipes! I’m quite new to this, so I was just wondering if I wanted to make this straight away in the morning, and I didn’t get the chance to soak the oats overnight, how should I go about doing it? Thanks!
