This is my all time favourite pancake recipe. Out of all the recipes that I tried, this is the one I always go to. So good I had to resist eating while frying!
5 tbsp plain yogurt
1 tbsp liquid sweetener (such as pure maple or agave or honey)
4 tbsp spelt flour
1/4 tsp baking powder
1/8 tsp baking soda
Mix the wet ingredients and dry ingredients separately. Pour the dry ingredients into the wet ingredients and stir to combine. Once everything is combined, stop mixing. Lumps are okay! Heat your pan and drizzled some coconut oil on top. Once the oil is hot, drop 1 tbsp of the batter onto the pan. Depending on how big your pan is, drop as many as you can. Flip when bubbles appear and the top looks dry. Make sure to use low heat. You don’t wanna burn them! Once flipped, cook for up to 1 minute. This in total makes 8-10 small pancakes. Just make sure you don’t devour it while frying. Enjoy!
